Bake: Chocolate Chip Muffins (With A Twist!)

Hands up, who loves chocolate chip muffins? This recipe for muffins is a creation that I stumbled across by accident. (My chocolate chips were out of date so I desperately had to improvise.) So, what did I use instead? Continue reading to find out!

Around Christmas, most people tend to have a tin of chocolates (or two) knocking about, don’t they? So when I discovered that my packet of chocolate chips was out of date, mid-baking session, I had no choice but to improvise by using some Celebrations. (No, really.) I really wish that I could emulate Nigella or Mary Berry in the kitchen, but unfortunately, instead of level-headed or sultry, my baking style is rather more hectic – Cue running around like a headless chicken, panic-stricken, with flour everywhere. That’s my cooking style.

At the end of making these, the kitchen was covered in flour and bits of caramel. And me? I had batter all over my chest. (Don’t ask.) Anyway, let’s get on to the recipe, shall we?

How to make these chocolate chip muffins (with a twist):

Servings: 12

Preparation time: 25 minutes

Cooking time: 20-25 minutes


Ingredients:
  • 1 medium egg.
  • 60ml vegetable oil.
  • 125ml semi-skimmed milk.
  • 100g caster sugar.
  • 200g self-raising flour.
  • Approx. 6 chocolates.
  • 1 tsp of vanilla essence.

Really Easy Chocolate Chip Muffins Recipe

Method:
  • Pre-heat your oven to 200C/gas mark 6.
  • Line a muffin tray with cases.
  • Beat the egg with an electric mixer for about 1 minute.
  • Add the milk and oil.
  • Beat the mix together until it’s combined.
  • Add the sugar and whisk until you have a batter.
  • Sift in the flour and add the vanilla essence.
  • Mix until it’s all smooth.
  • Cut the chocolates up and stir them into the mix.
  • Pour the muffin mix into the cases.
  • Bake for around 20-25 minutes, until they’ve risen and a skewer comes out clean.
  • Leave to cool.
  • Enjoy!
Notes:
  • Don’t leave the mix in your mixer for too long, it’ll make them harder.
  • Don’t leave them in the oven a few minutes longer than they need. They’ll be really dry.
  • You can replace the chocolates with good old chocolate chips, or even dried fruit if you fancy being healthier!
